We’re in birthday season for my kids and for every birthday we celebrate with an individualized pancake tower. Ricotta pancakes are the new staple pancake (discovered during quarantine!). They work great with our pancake molds, they re-heat fabulously in a toaster or toaster oven, and even if you do not like ricotta, I’m not sure it matters as my daughter felt the same way, but she LOVES these.
I’ve adjusted the size of the batter from the original recipe and can accurately say that it will feed our family of 5 which includes a 17-year-old boy who runs cross-country, a husband with a high metabolism + a teen & tween girl & me (with leftover for lunch or snacks)! My daughter cannot handle gluten very well, so we did the math to create a gluten-free, smaller-size variation.

Ricotta Pancakes {adapted from Magnolia Table: A Collection of Recipes for Gathering}
- 4 cups all-purpose flour
- ½ cup sugar
- 2 teaspoons baking soda
- 4 cups milk
- 1 ½ cups/16 oz. container ricotta cheese
- 4 large eggs
- 2 tablespoons vanilla extract
- 1 stick of butter (for the griddle or pan, using it to “grease” before each new batch)
- Pancake toppings (see below)
Mix all ingredients until just combined. Use medium heat for the griddle or pan, buttering before each batch. Use an ice-cream/batter scoop or ¼ cup to drop batter onto the hot griddle. Cook on one side until bubbles form and then flip (usually 2-3 minutes per side).
Serve with hot maple syrup, cream cheese (my daughter’s favorite), butter, lemon curd, raspberry jam and/or yogurt for serving!
Makes 6-8 servings depending on your family ;-).
Gluten Free Variation:
- 1 cup gluten-free all-purpose flour
- 2 Tablespoons sugar
- ½ teaspoon baking soda
- 1 cup milk
- 6 Tablespoons ricotta cheese
- 1 egg
- 1 ½ teaspoons vanilla extract
- Butter for griddle + toppings (see above)
